Xi'an Muslim Food: Biangbiang Noodles & Ancient Burgers

I landed in Xi’an and didn’t expect THIS much food. The first thing I tried was the famous Biangbiang noodles… and honestly, it changed the way I look at noodles forever. Thick, wide, chewy—but packed with flavor. Way better than anything I’ve had back in the States.
Then came a 2,000-year-old Chinese burger (Rou Jia Mo)… crispy bread, juicy meat, nothing like the bland stuff I grew up eating. It felt like REAL food.
And just when I thought I’d seen it all, I stumbled across a dish layered with tahini, mustard, chili paste, jelly-like noodles, and more. Wild flavors I’ve never experienced before.
Xi’an completely blew me away.
